We are launching a dark kitchen (cloud kitchen) in Mexico City and are seeking a reliable local assistant to support the setup process on the ground. This is a hands-on, coordination-focused role ideal for someone familiar with the local food, hospitality, or startup ecosystem. You will work closely with us to help navigate local regulations, source vendors, and prepare the kitchen for launch.

Responsibilities include:
* Research and assist with local licenses, permits, and food safety requirements.
* Help identify and assess suitable kitchen spaces (shared or private).
* Coordinate with local suppliers for ingredients, packaging, and equipment.
* Assist with delivery app onboarding (e.g., Uber Eats, Didi Food).
* Conduct local market and competitor research.
* Support staff sourcing and coordination if needed.
* Act as the local point of contact, providing regular updates and documentation.

Requirements:
* Must be based in Mexico City.
* Experience in Food & Beverage, hospitality, operations, or local business setup is a strong plus.
* Familiarity with local regulations and service providers.
* Strong communication and organizational skills.
* Proactive, reliable, and able to work independently.
